Hello Church Family!  We are believing with you, and for you, as you join us in this year's Daniel Fast and Week of Prayer!  We anticipate GREAT reports as to how God is moving in your life!  We also expect that some will struggle with this.  So, we created this blog so we can help encourage one another!   Feel free to leave comments, prayer needs, recipes you find helpful, and share with us (failures and successes) through this journey!

take about 4 apples. dig out the core only leaving about 1/2 inch on bottom.. take a spoon to get out seeds, then stuff with walnuts or pecans, and cranberries or your faviorate berries..(blueberries, rasberries. etc.)..and optional whole grain oatmeal.. mix all and stuff inside apples.place in baking pan and add 3/4th cup water around apples. bake at 350. for 30-40 min. .. till tender. not mushey. when done take juice around apples and baste overtop apples... yummy......... enjoy

also try fresh asparagus cut up into 2 inch pcs. ( throw away bottom 2 inches. not tops) . cut up 1 white or purple onion into chuncks... and 3 cloves of fresh garlic pressed.. and one package of sliced portabella mushrooms.. 2 TB extra v. olive oil. 1 tsp fresh rosmary diced.& a splash of red wine vinegar.. salt and pepper to taste.. cook over med high heat with lid about 5 min..stiring often.. just until a bit tender. not mushey..

Just FYI If you're going 100% by the rules of the Daniel fast you'll need to use a different vinegar. You can't use anything Wine based. (verse 8 of Daniel 1 specifies that he rejected wine)

I'd suggest Apple cider vinegar in this instance.

Hey Rosie! As far as the Red Wine Vinegar. I think it is up to you. You can do your own research on it. But, we allowed it last year. There are conflicting "reports" on it. Some websites suggest you avoid it, while others give you reasons it is ok. Same with sweeteners.... stevia, honey etc are acceptable natural sweeteners, and some websites allow for it, while others do not. It is a personal conviction decision. Tofu, soy products are fine on most websites, as well as all natural baking soda for "leavening". You just make a judgement call. Remember, we are not trying to eat "kosher"... just avoiding the "kings table".

For those participating in the fast with us.... I just want to remind you that you MIGHT actually have flu-like symptoms when you fast. This is your body detoxifying and flushing out toxins. The first three days are the roughest. BUT.... You "can do all things through Christ who gives you strength!!" Phil. 4:13

Welcome aboard Tamra!!! Glad the headache is gone! Dave's legs are still pretty bad. But, just think of all the junk that's exiting your system!! ;) Keep up the sources of protein, calcium and magnesium! And LOTS of water!!

I made a batch of Vegetarian Chili tonight, I haven't tried it yet. If it's any good I'll post the recipe tomorrow.

One of my go to recipes for the fast is my Black Bean Salsa. I eat it in the morning with Brown Rice (Bean and Rice eaten together are a complete protein). It's also good with Carrot and Cucumber Slices as a snack.

You need the following:
1 Can Organic Black Beans (Drained and Rinsed)
1 Can Organic Diced Tomatoes with Green Chiles
1 Bag Frozen Corn (Thawed and Drained)
1/3 cup Lime Juice
1/2 Tsp Dry Cilantro
1 Clove Garlic Chopped
Salt and Pepper to Taste

Mix everything in a storage bowl will a tight fitting lid, shake to combine, refrigerate over night.

You know it could be even harder for him.

I heard a story about a group of families at the church in the Midwest that gave up their thanksgiving meals. They, instead, donated what they would have spent on Thanksgiving to an oragnization that helps give food to those without.

& They ate Only Rice and Beans for a week (because that's the only thing people in many countries ever get to eat).

So, at least you're not putting him on the Rice and bean fast.

LOL!!!!! Robert.... you make me laugh! So.... I will post a couple of recipes tonight. (Gotta hook up to my external hard drive first!) We created a real good salsa recipe, and a potato soup. I think there is a health food store in Keystone??? If so, you can get totally organic corn chips for the salsa! Also, keep fruit around! It's EASY when you need something quick! YOU CAN DO IT!! :)

Make sure the ships are baked, instead of fried. & That they don't have preservatives or sugar in them.

I tried Guiltless Gourmet Baked Corn chips. Their pretty good for Health Food. I found them at Publix in Jacksonville.

I can't find a WW Tortilla that doesn't have something in it we can't have. Most of what I've found have enriched flour, eggs, or sugar in them.

EASY Potato Soup!
This is my own concoction and my kids love it! I made it tonight and it was yummy! I call it Pleasantly Pleasing Potato Soup! How's that for alliteration! :) Here ya go....

5lbs Potatoes peeled and diced
Cover with water
Add Kosher salt (or reg. salt if you don't have the other) and one large onion (chopped)

Bring to boil, then turn heat to medium until potatoes are tender (about 20 min)

Cream/mash a few of the potatoes to help make it creamy! Not too much or you'll lose your potato chunks and you want those! :)
Add Black AND White pepper to taste! (the white pepper makes this!)

Add frozen corn and give it time to heat up!
Add green scallions (as many as you like)

EAT!

I have used corn and peas and that's good too. You could add broccoli, or any other veggie to this and it would be great!

Sweet Treat:

If ya gotta have something sweet, this is a good one! My kids will eat this as well! It is a bit pricey however.

All Natural Peanut Butter
Honey
Ezekial 4:9 Cereal (Can be bought at Publix)

Heat PB and Honey and mix. Add cereal then spread in a pan and let cool! Cut up like brownies! They are good! I have to experiment to get the right amounts of ingredients! Sorry I can't give specifics! :(

It depends on you really. We passed out two info sheets, and the one says honey & herb (no black) teas. The other one does not offer that as an option... same with pastas. We, personally, allow honey as sweetner and whole wheat pasta. (you have to check the ingredients though... and be sure it is only wheat flour and no eggs etc)

what about styvia? it comes from an herbed plant? I have one growing on my porch... you can buy them at ace hardware for a couple bucks. and just boil them with your tea.. but I love water and have no issues just drinking water...

Thank you all for your input. It helps to see how others are fairing. Yesterday I had a terrible headache-not having my 3 cups of coffee in the morning but today is much better. Hang in there Sis. God will help you. I did the fast for 21 days last year with no meat no bread and no sweets God really helped me but when it was over I went to Cracker Barrell and Had chicken fried chicken with white pepper gravy. I thought it was a bit of Heaven!!!!!! I'll be prayin for you.

Oh yeah.

I've had Stir Fried Veggies with Soba (Japanese Buckwheat Noodles) both nights for dinner. I make a sauce by reducing OJ, Lime Juice, Soy Sauce, Garlic, and Ginger almost to a syrup.

I had that last night. A very Good Recipe is eggplant with whole grain spaghetti and homemade sauce. Take Oatmeal and blend it into a flour then drizzle olive oil on the sliced eggplant with salt, pepper, and garlic powder. Coat the eggplant and bake on 425 about 10 min each side> Homemade spaghetti sauce is Tomatoe sauce with mushrooms and the various herbs to taste! The Girls loved it and that is saying something.

Oh my goodness! I have been sooooooo tired lately! You never realize how much "energy" you get from all the junk we eat and drink all the time. My body has been telling me its time to go to bed, but its so early compared to my regular bedtime. Not sure I'll survive yet!!!! :/

GOTTA TRY IT!!!

I made something like peanut brittle tonight!!! YUM! I love to create! Place sliced almonds in a bowl and coat with honey. Spread them out on a parchment lined baking sheet and sprinkle cinnamon and salt! Bake at 400 for about 7 minutes or until browned. Watch them around the edges. Let cool on a baking sheet and they will get crunchy! GREAT HEALTHY SNACK! Almonds are so good for you! So is cinnamon!

SPEDDEN SALSA!

8 Roma Tomatoes
1 Jalapeno Pepper (we use half for the kids)
1/2 Medium Sweet Onion
1 Clove pressed garlic
About 9 2" sprigs of fresh cilantro

Place in a food processor... do not liquefy completely!

Add Salt & Pepper to taste
Add approx 1 tsp of honey
Add 1/4 Fresh squeezed lime juice

Simmer on med-low heat about 20 minutes... the color will darken and it will get thicker.

Chill! Yummy!

SPAGHETTI SAUCE

1 Sweet Onion Diced
1 Yellow Onion Diced
1 Zucchini Diced
Saute in Olive Oil, salt and pepper, until tender
Add one large can of Fast approved Diced Tomatoes
Add one can of Daniel Fast approved Tomato Sauce (Ragu (Light) has and all natural, no sugar, perfectly acceptable sauce... at walmart)
Add one clove of pressed garlic
Simmer until served!

I usually make my own sauce from stewed tomatoes and add seasonings... but this time I tried the Ragu... it was actually very good! The kids loved it!

Rice cakes with peanut butter and honey or bananas are a great lunch. Also Dole has come out with all natural fruit cups in natural fruit juice so the kids can take them to school quite easily.

Had a morning. My car battery was completely dead. Borrowed my in-laws truck to go to palatka to work. Truck ran hot and I was standed on Hwy 20. AAA picked up truck & took to shop. I just prayed and talked to GOD to help me not stress and He did.2 1/2 hrs late to work.THANK GOD ANYWAY!!!!!

Good Morning Everyone!

I just wanted to let you know that if Satan is coming after you like it's the end of the world, you're not alone.

Just recognize that his attacks are simple and clear proof that your fasting is what God wants, and what he doesn't.

Stay strong and keep pushing towards God. I believe more than ever before that we're on our way to Victory.

Praise God for the strength to go on one more day, and the Grace that never stops flowing.

NEW RECIPES! Straight from my friend (Pastor's wife at Palatka First A/G) Daniel Fast Cookbook!

TWO BEAN BURGER (Not sure why they call this thing a burger! It never really firms up....and... you gotta like beans to like it! Actually, I don't particularly like beans, but I did actually like it! We had it tonight for dinner... I added saute'd mushrooms and a bit of our homemade salsa)


TWO-BEAN BURGER

1 tsp extra virgin olive oil
2 tbsp chopped onion
1 cup canned black beans, rinsed and drained
1 cup canned great northern beans, rinsed and drained
2 tbsp flaxseed meal
1 tsp garlic powder
1/4 tsp cumin
1/4 tsp salt
****I also add 1/4 cup cooked brown rice for more texture

Mash beans in a large bowl, leaving about 1/4 of the beans whole, set aside.

Heat oilive oil in large skillet over medium heat. Add onions, and cook until soft and translucent. Place in a bowl with beans, and add flaxseed meal, garlic powder, cumin and salt.

Return skillet to medium heat, and add a teaspoon of olive oil, if needed, to prevent burgers from sticking. Scoop out about 1/3 cup of bean mixture for each burger, and add to skillet. Flatten with a spatula. Cook 5 minutes, or until bottoms are browned and slightly crispy. Flip and cook another 5 minutes.



BANANA MUFFINS

3 mashed bananas or two peeled and diced apples
1 1/4 cup wheat flour
1/2 cup honey
1 tsp salt
1 tsp baking soda
1/4 cup canola oil
1 cup chopped walnuts

Mix all together and bake at 350 for 20 minutes!

The muffins are really quite good! I made them this morning! Great for breakfast, or a filler snack! (I didn't use walnuts, but I'm sure that would be good!) The only thing that would make these better is chocolate chips! :)

2 TB cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/4 cup water
2 apples with the bananas


it tasted like banana nut bread..

Day 6 for me (I started early) up to walking a 1 1/4 miles a day now! Craving me some boiled peanuts right now!! YUM! Had me some gucamole with triscuts today...tasty! Looking at a nice fruit salad for supper. Freeze some 100% juice for popsicles! My kid is eating them as fast as I can freeze them!

Sweet potato hummus

1 1/2 - 2 pounds sweet potatoes
1 12-oz can chick peas
1-2 cloves garlic
2 Tbsp extra virgin olive oil
2 tsp+ tahini (sesame paste), divided
juice of 1 lemon, divided
1/4 tsp salt
couple of shakes of pumpkin pie seasoning
Peel the potatoes and chop into 1" cubes. Steam for about 10 minutes.
Drain water from the can of chick peas into a small bowl and reserve.
In a food processor (or blender), mix together the chick peas with the remaining rest of the ingredients, being careful to add second half of lemon juice and tahini slowly, stopping to taste.
Slowly add some of the reserved liquid from beans and a bit of water for correct consistency,(about 1-2 minutes) until a smooth, slightly fluid paste is formed.
Refrigerate for at least 30 mins before serving. This changes the taste of the hummus by allowing the flavors to form.

This fast has been so good to Nate and I! God is really working in us!! I have a couple of recipes I'd like to share! Nate and I love these!! :)

Garlic Lime Spinach-(Don't let the word "Spinach" scare you)
Put a little olive oil in a pan. Add some fresh minced garlic. Add your spinach. Squeeze a fresh lime over all the spinach.. let it wilt and your ready to eat. Literally it will take you 5 minutes total to prep and cook!! It's good for on the go lifestyle.

But.. I made a smoothie that will knock you off your FEET tonight!!

Single Serving Fruit Smoothie
1 Cup unsweetened soy milk
1 ripe banana, broken into chunks
1/2 cup of your favorite fresh or frozen fruit(strawberries, peaches, cherries.. ect)
Pinch of Cinnamon
2-3 Ice Cubes

Place all ingredients (except ice cubes) in a blender and puree.
Add ice cubes one at a time to reach desired consistency. (If you use all fresh fruit, use more than three ice cubes.)
Serve Cold.

Hey Everyone! I hope the Daniel Fast is treating you well! I have so much energy and my time with God this week has been so awesome!! Whatever you do.. DON'T GIVE UP and DON'T GIVE IN... YOU CAN DO THIS! (Phil 4:13) I just wanted to share some recipes, Megan and I, have been using this week. We are actually are going to apply most of this to our constant diet and lifestyle. We love it! So here we go:

Home Made Popcorn
Put some olive oil in the bottom of a pot. Add a half a cup of kernels. Add salt and pepper. Put a lid on it and wait for it to stop popping! Then it's good to eat! (I love to snack! This is perfect for snacking)

Popcorn is a GREAT snack!! We had it almost every night last year! ha! We just made it again last night! Forgot how good it was! You can also add flavoring to the oil itself! Any seasoning you like.... if you like a little heat, then add a bit of cayenne pepper.... if ya like it sweet (like caramel corn) you could even a little honey to the oil! All kinds of flavored popcorn is possible! yummy! Yes! Great snack!
